Family and locally owned T & R Meat Processing is ready to process and ready your sheep or goat meat. We offer a selection of customizable options in whatever cut you like. We also package your cuts right in the shop, so it’s easy and convenient for you to carry them home.

Here are a few helpful tips to help you complete your cutting instructions.

Are you getting a half or whole?
How many chops do you want in a package-typically how many you serve at a meal. How thick would you like them cut (3/4” or 1”) most common.
Out of the shoulder you can make steak or roasts or both. The steak how many do you want in a package? For the roasts how many pounds each? If you want both we typically cut half into steak and half into roasts.
Do you want ribs? If not, they are boned out for burger.
Do you want the hind legs (leg of lamb/goat) left whole or cut in half?
Do you want the shanks? If not, they are boned out for burger.
Ground burger-what size package? 1#, 1 ½# or 2# packages
Do you want the heart or the liver?
