Beef Custom Processing Cutting Order Instructions

Here are a few helpful tips to help you complete your cutting instructions.

  • Fill in the farmer’s first and last name
  • Provide your first and last name
  • Provide your phone number
  • What portion of beef are you getting? Quarter, Half, or Whole


Steaks


We need to know how many in a package-typically how many you serve at a meal. We also need to know how thick you want them cut-3/4” is the standard but we can cut them thicker. You can either choose Tenderloin and New York strip OR T-Bone and Porterhouse steak…these are the same pieces of meat. The tenderloin and New York strip is the T-Bone and Porterhouse steak with the bone removed. 


We cut the top sirloin only for the sirloin…the bottom goes to hamburger.


You can choose either rib steak (with bone) or ribeye (without bone). This is also where your prime rib roasts come from as well.


Round steak is a tougher steak and oftentimes is put into hamburger. It can be left as round steak or tenderized for cube steak. I can also be made into stew meat.


Roasts


Roasts are packaged one per package. There are typically 8-10 3# roasts in a quarter of beef. You will usually get 1 sirloin tip roast, 1 rolled rump roast, 2-3 arm roasts and 2-3 chuck roasts. Roast sizes can range from 2-5#. The average size is 3#.


Other Items


If you do not want short ribs, they are boned out for hamburger.


If you do not want soup bones, they are boned out for hamburger. They have meat on for bone broth.


If you do not want the brisket it is put into hamburger.


Skirt and flank steak are available upon request.


You have the option of taking the heart, tongue, tail and liver.


You can also request suet-a plastic grocery bag of fat for the birds.



Dog bones are also available upon request.


Hamburger


Hamburger package sizes available are 1#, 1 1/2# or 2# packages. Hamburger patties are available for an additional charge. You can choose from 1/4# and 1/3#. They are sleeved with paper in between them so you can use whatever quantity is convenient for you.


All your meat is paper wrapped except for the hamburger and patties which are packaged in a plastic bag. Due to our safe practices, T & R Meat Processing has not only become the butcher shop Clearwater, MN loves, but also the meat market Clear Lake, MN depends on.
